I made this Carrot Cake from the latest issue ~ We all LOVED it!
I find many carrot cakes on the dry side but this one was moist. Next time I may add another 1/2 cup of carrots and maybe a 1/4 cup of pineapple ~ diced in tiny pieces.
I also added 1/4 LESS confectioner sugar than called for ~ for the frosting.
NOTE ~ Watch those bratty kids in your house!!! Ashley came home late the night I made it and as we slept ~ ate half the frosting off the top!!!
